Spread the festive cheer with these smiley gingerbread men. The only thing that could possibly make regular gingerbread ANY better is knowing that they’re entirely nasty-free, nut-free and chocolatey! Makes 30 gingerbread men
240g (1 cup) Bio Buttery, softened
80g (1/2 cup) coconut sugar
1 tsp vanilla extract
Pinch sea salt
240g (2 cups) buckwheat flour
60g (1/2 cup) cocoa powder
1/2 tsp baking powder
1 tsp ground cinnamon
Decorations of choice
Combine your Bio Buttery, coconut sugar, vanilla extract and sea salt into a mixing bowl and beat well for 5-8 minutes, or until light and creamy in consistency.
In a separate bowl, whisk together you buckwheat flour, cacao, baking powder and cinnamon.
Add your dry ingredients into your wet bit-by-bit until combined. Ensure you scrape down the sides of your mixing bowl throughout this process.
Sandwich your dough between two pieces of baking paper and roll out until a thin slab (or two) is formed. Place onto a baking tray and allow to chill in the refrigerator for half an hour.
Cut the cookies into your desired shapes and return to the refrigerator for 5-10 minutes. This will ensure your gingerbread men maintain their shape in the oven.
Bake for 20-30 minutes or until the cookies are cooked through.
Remove the cookies from the oven and allow them to cool completely on your baking trays.
Transfer to a cooling rack to decorate!
