Apple, Walnut and BioCheese Cheddar Salad

This is a great light salad for the summer months - and really lovely to serve as a side salad during your holiday season festivities!

Serves: 2-4

Ingredients:

- 1/2 head red cabbage

- 2 cups baby spinach

- 1/2 cup MyLife BioCheese Cheddar Block, grated

- 1/2 red apple, finely sliced

- 1/2 cup walnuts, roughly chopped

- 1/4 cup alfalfa sprouts

Vinaigrette: 

- 1 tsp dijon mustard 

- 2 tbsp white wine vinegar

- 1 tbsp agave syrup

- 1 tbsp lemon juice

- 1 clove garlic, crushed

- pinch of salt

Method:

1. Add all salad ingredients together in a bowl.

2. To make vinaigrette, add all ingredients together in a jar. Screw on lid and shake vigorously until well combined.

3. Drizzle vinaigrette over salad. Toss and serve. Grate a little extra BioCheese over the top if you wish. Enjoy!
