Makes: 8

Ingredients

1 cup warm water

2 tsp active dry yeast

1 tsp granulated sugar

3 cups all-purpose flour

1 tbsp extra-virgin olive oil

1.5 tsp salt

Dried oregano, to taste

1 tub BioTzatziki

Method

  1. Preheat oven to 500 Degrees Celsius and place large pan inside. In a large bowl, mix together warm water, yeast and sugar, until dissolved. Stir in 1/2 cup of flour and leave for 15 minutes (or until mixture bubbles).

  2. Stir in oil, salt and 2 cups of flour - mix until shaggy dough forms.

  3. Sprinkle a small amount of flour over a clean surface and place dough on top. Knead until smooth and elastic (approx. 8 minutes), adding additional flour as required.

  4. Place dough in a large bowl and cover with plastic wrap - let this rest in a warm place until the dough doubles in size (approx. 1 hour).

  5. Sprinkle a small amount of flour over a clean surface and place dough on top. Punch down dough until spread across surface. Divide dough into 8 sections and roll into balls. Cover balls with a towel and let them rest (approx. 10 minutes).

  6. Roll each ball out into a small circle (approx. 20cm wide), using extra flour if required.

  7. Open oven and place maximum number of pitas onto pan (those that will fit without touching). Allow to bake until air pockets form and the pita begins to brown (approx. 4-5 minutes). Repeat with remaining dough.

  8. Sprinkle oregano on top of cooked pita bread.

  9. Generously spread BioTzatziki on top.

Happy tasting!
