Ingredients

  • 1 tub BioTzatziki

  • 2 pita breads/wraps

Potatoes

  • 2 medium potatoes

  • Olive oil

  • 1/3 cup lemon juice

  • 1 tbsp dried oregano

  • Salt, to taste

Salad

  • 2 cucumbers, sliced

  • 6 cherry tomatoes, halved

  • 1/2 purple onion, sliced

  • Olive oil

  • Salt and pepper, to taste

Method

  1. Preheat oven to 200 Degrees C. Peel potatoes and and cut into wedges. Place wedges into mixing bowl with all other ingredients and toss until well combined.

  2. Spread wedges onto a baking tray and cook in oven for 15 minutes. Once golden, turn the potatoes and bake for a further 10 minutes. Allow to rest.

  3. Pan fry your pita breads/wraps over a low-medium heat for 2 minutes. Allow to cool.

  4. Place all salad ingredients into a mixing bowl and toss to combine.

  5. Generously spread BioTzatziki over pita breads/wraps (the creamier, the better!), add potato wedges and salad.
