Creamy Spinach Gnocchi with BioCheese Grated Parmesano

Meal time just got a whole lot easier with our Grated Parmesano - The only topping you’ll ever need. Have the whole family pleased with this flavourful creamy gnocchi, topped with the sharp, fruity and nutty taste of our NEW Parmesano.

Serves: 2-3

Ingredients

1 cup gnocchi

1 onion, diced

3 cloves garlic, minced

1 cup spinach leaves

1 tsp dried thyme

1 tsp Italian spices

1 tsp black pepper

1/2 tsp salt

2/3 cup BioCheese Parmesano Shred

1 tbsp Dijon mustard

1 cup coconut cream

To serve

BioCheese Parmesano Shred

Walnuts, toasted

Method

  1. Cook gnocchi according to package instructions; drain and set aside. Preheat oven to 180 degrees Celsius.

  2. Heat a non-stick pan with oil. Cook the onion and garlic until golden brown (approx. 5 minutes). Following this, bake walnuts in oven for approximately 8-10 minutes. Set aside to cool.

  3. Add spinach, thyme, Italian spices, pepper, salt and BioCheese Parmesano Shred to pan. Cook until spinach is wilted. Stir in Dijon mustard and coconut cream until well combined.

  4. Mix in pasta. Top with toasted walnuts and generous serving of BioCheese Parmesano Shred.
