Bio Cheese Feta and Spinach Triangles

What better way to celebrate our Mediterranean style BioCheese Feta than with a Mediterranean staple? Combining creamy feta, flavoursome spinach and BioButtery filo, these triangles are sure to leave you wanting more. Enjoy these as a grab-and-go snack, dinner party companion or meal side!

Serves: 22

Ingredients:

2/5 cup vegetable oil

1.5 large onions diced

200g frozen spinach, thawed, drained and squeezed dry

1.5 tablespoons fresh dill, chopped

1.5 tablespoons plain flour

1 packet Bio Cheese Feta (200g), crumbled

3 tablespoons flaxseed meal

8 tablespoons water

Pinch of salt and pepper

1 box (300g) of thawed filo pastry

270g Bio Buttery, melted

Method:

  1. Preheat oven to 180 degrees Celsius.

  2. Make 3 flax-eggs by combining the flaxseed meal and water. Whisk lightly.

  3. Pour vegetable oil into a large saucepan over medium heat. Stir and cook onions until softened. Mix in spinach, dill and flour. Cook for approximately 10 minutes or until most of the moisture has been absorbed. Remove from heat.  Mix in Bio Cheese Feta, flax-eggs, salt and pepper.

  4. Remove one sheet of filo from the group and brush evenly with a light coating of Bio Buttery. Put another sheet of filo over the butter and press the 2 sheets together. Slice the layered filo pastries into long strips (approximately 8cm wide). Cover the remaining filo with plastic wrap to prevent it from drying out.

  5. Lay out one strip of filo at a time on your work surface with one of the narrow ends closest to you. Place a large tablespoon of filling 2cm from the end closest to you. Fold the bottom right corner over the filling to the left edge, forming a triangle. Fold the triangle up, by bringing the point at the bottom left up to rest along the left edge. Turn the lower left corner over to touch the right edge. Continue process of turning the triangle over in this way until reaching the end of the filo.

  6. Repeat process with the remaining filling and filo pastry.

  7. Place the completed triangles onto a large baking tray filled with baking paper. Lightly brush triangles with the remaining Bio Buttery. Bake in preheated oven for 45 minutes – 1 hour, or until golden brown.
