Fresh Basil & Parmesano Pesto Pasta

For the next recipe in our Great (Bio)Cheese Swap, we’re enjoying the fresh flavours of basil in combination with the sharp, fruity and nutty taste of our NEW BioCheese Grated Parmesano. Taking no longer than 15 minutes to prepare, this flavoursome meal is sure to be loved by the whole family.

Ingredients

  • 1 packet pasta of choice

  • 2 cups fresh basil leaves, packed

  • 1/2 cup BioCheese Grated Parmesano, plus more for topping

  • 1/2 cup olive oil

  • 1/3 cup pine nuts

  • 3 garlic cloves, minced

  • 1/4 tsp salt

  • Pinch of pepper

Method

  1. Pulse basil and pine nuts in a food processor.

  2. Add in the garlic and BioCheese Grated Parmesano, pulse several times more.

  3. While the food processor is running, slowly add the olive oil.

  4. Stir in salt and pepper, add more to taste.

  5. Cook pasta of choice according to packet instructions. 

  6. Top with pesto and generous serving of BioCheese Grated Parmesano.
