Roast Pumpkin With Bio Marinated

An easy throw together side dish to accompany almost anything! We love the simplicity of roast veggies and pumpkin is a stand out. High in nutrients and packed full of antioxidants. Change it up if you desire, but we love this seed packed topping that accompanies our Bio Marinated perfectly.

Ingredients

Bio Marinated

1kg Pumpkin

1 garlic clove, finely diced

1 lemon, halved

Oil to drizzle

Salt and pepper, to season

 

To Serve

Bio Marinated, crumbled – as many cubes as desired

50g Pumpkin seeds

50g Flaxseeds

Handful of sesame seeds

1 bunch parsley, chopped

Chutney, if desired

 

Method

1) Preheat the oven to 180◦c.

2) Cut pumpkin into 3cm thick wedges, removing the seeds. Then place on a lined baking tray.

3) Drizzle with olive oil then add garlic and lemon. Then season with salt and pepper.

4) Place in the oven and grill for 30 minutes

5) Remove from oven and sprinkle with parsley, seeds and crumbled Bio Marinated. Add chutney if desired.
