Protein Packed Pasta topped with BioCheese Halloumi

Our bodies use protein to build and repair tissues, making it very important for our diets. To celebrate this nutrient, we’ve whipped up a super easy, protein packed pasta! Our BioCheese Halloumi adds a soft and mild pop of Meditteranean flavour to this simple dish.

Ingredients

1 cup fresh tofu

3 tablespoons olive oil

1 cup mushrooms, sliced

1 cup zucchini, sliced

Oregano

Salt and pepper

250g lentil pasta

BioCheese Halloumi, to taste

For the sauce:

3/4 brown onion, chopped

2 cloves garlic, crushed and minced

3 tablespoons olive oil

6 cups tomatoes, chopped (canned or fresh)

1/4 cup fresh parsley

1/4 cup fresh basil

1 tsp salt

Method

  1. Heat olive oil over medium heat. Add onion and cook until tender. Stir in garlic, tomatoes, parsley, basil and salt.

  2. Bring sauce to a boil. Reduce heat and simmer, uncovered, for 1 hour, stirring frequently.

  3. Boil water and cook lentil pasta according to packet.

  4. While the pasta is cooking, add 3 tablespoons of olive oil to a non-stick frying pan on medium heat. Once heated, cook fresh tofu for 3 minutes on each side. Add salt for desired taste.

  5. Remove tofu from pan and add sliced mushrooms and zucchini. Add oregano, salt and pepper to taste. Cook on medium heat for approximately 5 minutes.

  6. Add sliced mushrooms, zucchini, tofu and lentil pasta to napoli sauce.

  7. Slice a small rectangle (2x2cm) of BioCheese Halloumi and grate on top of dish.
